Here’s a yummy spin on coleslaw for your summer menus & parties! It came together when I needed to make a salad for a dinner with friends, but hadn’t made a grocery trip, so I used what we had in the fridge!
1/2 of a small red cabbage
4-5 purple carrots
1/2 cup dried cranberries (optional)
2 limes, zested & juiced
2-3 TBSP maple syrup, to taste
Salt, to taste
Shred cabbage and carrots into bowl, add cranberries, and lime zest, and toss.
Add lime juice, salt, and then maple syrup 1 TBSP or drizzle at a time, mix.
The cabbage & carrots will produce more liquid after the salad chills.
The flavors “show up” after it sets for awhile!
Refrigerate until chilled or overnight.
Serves 8-10, tastes great chilled!
